Method
Rice
Rinse the short-grain rice under cold water until the water runs almost clear (about 3–4 rinses) to remove excess starch. Drain well.
Combine the rinsed rice and 1.1 cups water in a small pot with a tight-fitting lid. Let the rice sit 20–30 minutes (optional) to hydrate for better texture.
Bring to a boil over medium-high heat, then reduce to the lowest heat, cover, and simmer for 12–14 minutes until water is absorbed. Turn off heat and let rest, covered, for 10 minutes. Fluff with a fork or rice paddle and keep warm.
Ground Chicken Soboro
Prepare sauce
In a small bowl combine soy sauce (3 tbs), mirin (2 tbs), sake (1 tbs), sugar (1 tsp), and sesame oil (1 tsp). Stir until sugar dissolves; set aside.
Heat a large nonstick skillet over medium heat. Add 1 tablespoon vegetable oil and swirl to coat. Add the finely minced onion and sauté 3–4 minutes until softened and translucent.
Add the ground chicken, breaking it up with a spatula or wooden spoon into small pieces. Cook, stirring frequently, until the chicken is no longer pink (about 5–7 minutes). Push cooked meat to the sides occasionally to allow even browning but avoid long high heat that dries it out.
Pour the prepared sauce over the cooked chicken. Stir well so sauce contacts all meat. Reduce heat to medium-low and simmer, stirring occasionally, until the liquid mostly evaporates and chicken becomes glossy and slightly caramelized, about 4–6 minutes.
Taste and season with 1/4 tsp ground white pepper (or black) and adjust soy/mirin balance if desired. Remove from heat and keep warm.

Transfer the scrambled eggs to a small bowl and break into small pieces with a spoon or chop lightly so they will sit as fine yellow crumbles on the rice.
Assembly & Garnish
Spoon an even portion of the warm ground chicken soboro onto one side of each bowl of rice (or half on one side and half on the other, leaving space for the eggs).
Scatter sliced green onions, toasted sesame seeds, and a few strips of nori over the bowls. Add 1–2 tablespoons pickled ginger or pickled radish per bowl alongside the soboro if desired.
Serve immediately while warm. Optional: provide extra soy sauce or chili oil at the table.
