Prepare base

If using a store-bought ready-to-freeze vanilla soft serve mix, follow package directions to chill and freeze in a soft-serve machine. If using a homemade base, whisk 2 cups vanilla soft-serve base (or softened vanilla ice cream), 1 cup whole milk and 2 tablespoons sugar until smooth, chill 30 minutes, then freeze in an ice cream maker or soft-serve machine according to manufacturer instructions until a soft-serve consistency is reached.

Keep the soft serve in the machine hopper or a chilled container so it remains scoopable/dispensable while you prepare the rest.

Matcha Latte

Bloom matcha

Sift 2 teaspoons matcha powder into a small bowl to remove lumps. Add 2 tablespoons hot water (about 80°C / 175°F) and whisk vigorously in an M or zig-zag motion with a bamboo whisk or small whisk until smooth and frothy, about 15–30 seconds.

Heat and froth milk

Warm 3 ounces milk until hot but not boiling (about 60–65°C / 140–150°F). Froth with a milk frother or vigorously whisk to produce light foam. Stir in 1 teaspoon simple syrup or honey if you prefer sweeter latte.

Combine the whisked matcha with the frothed milk and set aside. Keep warm but do not overheat — you'll pour this over the soft serve at serving time.

Chocolate Crunch & Sauce

Make chocolate sauce

Chop 2 ounces dark chocolate and place in a heatproof bowl. Heat 2 tablespoons heavy cream until steaming (do not boil) and pour over chocolate. Let sit 30 seconds, then stir until smooth and glossy. If needed, microwave in 5–10 second bursts to fully melt. Set aside to cool slightly; sauce should be pourable but not too hot.

Prepare chocolate crunch

In a small bowl, combine 1 ounce chocolate cookie crumbs, 2 tablespoons toasted puffed rice or crunchy granola, 1 teaspoon melted unsalted butter, and a pinch of sea salt. Toss until crumbs are evenly coated and clump slightly. Taste and adjust salt or sweetness. Keep in an airtight small bowl until assembly.

Assembly & Garnish

Chill serving glasses slightly (optional). If desired, dip the rim of each glass in a little chocolate sauce, then into extra cookie crumbs to create a crumb rim.

Dispense 1 generous swirl (about 1 cup) of vanilla soft serve into each chilled glass or cup. Aim for a moderately tall swirl so the latte can be poured over without overflowing.

Drizzle 2 tablespoons chocolate sauce over the soft serve so it runs down the sides and pools slightly on top.

Spoon or sprinkle 1 tablespoon of the chocolate crunch evenly over the sauce-topped soft serve for texture.

Slowly pour 3 ounces of the prepared matcha latte over the soft serve—pouring at the edge will create layered visual effect. If the matcha is warm, the soft serve will soften slightly for a creamy latte texture.

Dust with up to 1 teaspoon matcha powder for color (optional) and finish with an extra pinch of cookie crumbs on top. Serve immediately with a long spoon and straw.
