Soft Serve Base
Prepare soft serve base
If using a ready-made soft serve mix, follow package instructions and chill per manufacturer recommendations. If using a homemade base: whisk together 2 cups vanilla soft serve mix (or softened vanilla ice cream base), 1 cup whole milk, 1 tablespoon granulated sugar, and 1 teaspoon vanilla extract until smooth. Chill mixture in the refrigerator for at least 1 hour (ideally 2–4 hours) to ensure it is thoroughly cold before churning.
Churn
Pour chilled base into an ice cream machine or soft serve machine and churn according to the machine's instructions until the mixture reaches a soft-serve consistency (usually 10–20 minutes depending on equipment). If you have a commercial soft-serve machine, dispense directly when ready. If using a home ice cream maker, transfer soft-serve texture ice cream into a piping bag or scoop for immediate assembly.
Matcha Latte
Sift matcha
Sift 2 teaspoons ceremonial-grade matcha powder into a small bowl to remove clumps. Sifting ensures a smooth, lump-free matcha layer.
Make matcha paste
Add 3 tablespoons hot water (about 175°F / 80°C) to the sifted matcha. Whisk briskly in a zigzag motion (using a bamboo whisk if available) until the matcha is fully dissolved and a frothy, bright-green paste forms, about 15–30 seconds.
Sweeten and finish latte
Heat 1 cup milk until steaming but not boiling (or warm in microwave), then froth lightly if desired. Stir in 2 teaspoons simple syrup (adjust to taste). Pour about 1/3 cup of the warmed milk into the matcha paste and whisk until smooth. Then combine the remaining milk. Taste and adjust sweetness. If the matcha mixture is too thick for pouring, thin with up to 2 tablespoons cold water until pourable but still vivid.
Assembly & Garnish
Assemble the soft serve latte
In a tall glass, spoon or pipe a generous swirl of vanilla soft serve (about 3/4 to 1 cup of soft serve) leaving room for the matcha latte. Slowly pour the warm matcha latte over or around the soft serve so it forms a layered look (matcha will partially melt the soft serve creating a creamy fusion) — use about 3/4 cup of matcha latte per serving.
Optional finish
Top with 2 tablespoons whipped cream if desired and dust lightly with 1 teaspoon matcha powder for color and aroma. Serve immediately with a spoon and straw.
