Sift and bloom

Sift 2 tsp matcha powder into a small bowl or matcha bowl to remove clumps. Pour 60 ml hot water (about 80°C / 175°F) over the powder.

Whisk

Using a bamboo whisk (chasen) or small whisk, briskly whisk in an 'M' or 'W' motion until the matcha is frothy and fully dissolved, about 15–30 seconds. This yields a smooth concentrated matcha mixture.

Sweetener

Stir 30 ml simple syrup (or matcha syrup) into the warm matcha until fully combined. Taste and add the optional additional 10 ml simple syrup if you prefer sweeter soda.

Soda and finish

Fill a tall glass with about 1 cup of ice. Pour the sweetened matcha concentrate over the ice.

Slowly pour 200 ml chilled club soda into the glass over the back of a spoon or down the side to preserve some effervescence and create a layered look if desired. Gently stir once or twice to combine, taking care not to over-stir to keep bubbles.

Garnish with a lemon or lime wedge on the rim and a mint sprig if using. Serve immediately with a straw.
