Prepare hojicha warabimochi (if not pre-made)
If you do not have pre-made warabimochi, make it ahead: combine warabi starch (bracken starch) with sugar and hot water and whisk until translucent; stir in 1–2 tablespoons of hojicha syrup or strong brewed hojicha for color/flavor; pour into a shallow pan, chill until set, then cut into 1/2-inch cubes. Cool completely before layering. Yield: about 1.5 cups cubed.
Make hojicha syrup (if using)
To make quick hojicha syrup: steep 4 tablespoons hojicha leaves in 250 ml just-off-boil water for 3 minutes, strain, add 120 g granulated sugar, warm gently until dissolved, cool. Alternatively use concentrated chilled brewed hojicha (about 120 ml per 4 parfaits). Keep chilled.
Assemble 4 parfaits using tall glasses (approx. 12–14 oz / 350–420 ml capacity). Start by spooning 1½ tablespoons crushed sesame tuile or cookie into the bottom of each glass to give texture and absorb moisture.
Spoon 2–3 tablespoons (about 2 tablespoons = 30 ml) of vanilla or hojicha panna cotta (soft set) into each glass on top of the crushed cookie to create a creamy layer. Smooth lightly with the back of a spoon.
Add a layer of cubed hojicha warabimochi: divide the 1.5 cups evenly among 4 glasses (about 6 tablespoons or ~1/4 cup per glass) and arrange on top of the panna cotta layer.
Place about 2 tablespoons (roughly 30–40 g) of sweetened anko on top of the warabimochi in each glass. If anko is very stiff, soften with a teaspoon of warm hojicha syrup to make it easier to spoon.
Pipe or spoon roughly 3 tablespoons of lightly sweetened whipped cream into each parfait, creating a fluffy top layer. For a decorative peak, use a star tip.
Drizzle approximately 1 tablespoon (15 ml) hojicha syrup over the whipped cream of each parfait for added flavor and sheen. If using chilled brewed hojicha instead of syrup, gently spoon 1–2 teaspoons per parfait so layers don't get soggy.
Sprinkle a generous 1/2 teaspoon of roasted kinako over each parfait and finish with a pinch (about 1/4 teaspoon) of roasted sesame seeds. Add a fresh mint leaf for color if desired.
Serve immediately chilled. If you need to hold them for up to 2 hours, cover and refrigerate; add whipped cream, kinako and sesame garnish just before serving to preserve texture.
