RED BIRD BREWING - This traditional German style lager is light, crisp and easy drinking with a smooth finish.

In a large pot, heat 5 liters of water to 165°F (74°C). Add the Pilsner and Carapils malts, and maintain a temperature of 150°F (65°C) for 60 minutes while stirring occasionally.

Mashing the Grains

After mashing, strain the grains and bring the liquid (wort) to a boil. Add Hallertau hops at the start of the boil and Saaz hops with 15 minutes remaining. Boil for a total of 60 minutes.

Boiling the Wort

Cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the German lager yeast and seal with an airlock. Ferment at 50°F (10°C) for 2-3 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them.

Bottling

Let the bottles condition at room temperature for 1-2 weeks to carbonate, then refrigerate before serving.
