Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for another 10 minutes. Once done, transfer the rice to a bowl.
Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.
Prepare Tuna Filling
In a bowl, combine the drained tuna with mayonnaise. Mix well to create a creamy filling. Set aside.
Assemble the Roll
Place a bamboo sushi mat on a flat surface. Lay a sheet of nori, shiny side down. With wet hands, spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Place a line of tuna filling, cucumber, and avocado along the center of the rice.
Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Once rolled, wet the edge of the nori with a little water to seal the roll.
Slice and Serve
Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi on the side.
