Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes. Once cooked, let it sit covered for 10 minutes.
Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.
Prepare the Fillings
Slice the avocado into thin strips. Cut the smoked salmon into strips as well. Soften the cream cheese if necessary for easy spreading.
Assemble the Roll
Lay a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top. Lay down a line of cream cheese, followed by smoked salmon and avocado slices in the center of the rice.
Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll until you reach the edge of the nori, then wet the edge to seal it.
Slice and Serve
Using a sharp knife, slice the roll into bite-sized pieces. Sprinkle with sesame seeds and serve with soy sauce for dipping.
