Prepare aromatics
Crush the garlic cloves and thinly slice the piece of ginger. In a large pot, heat 1 tsp sesame oil over medium heat and sweat the garlic and ginger for 1–2 minutes until fragrant but not browned.
Add the chicken stock and dashi to the pot and raise to a gentle simmer. Do not boil vigorously—maintain a simmer to keep the broth clear.
Stir in soy sauce, mirin, and miso paste until dissolved. Taste and adjust salt. Simmer the broth gently for 10–15 minutes to allow flavors to meld. Keep warm while preparing other components.
Noodles & Tare
Bring a separate pot of water to a rolling boil. Add the ramen noodles and cook according to package instructions (usually 2–4 minutes for fresh, 4–6 minutes for dried) until tender but still springy. Stir occasionally to prevent sticking.
While noodles cook, split the tare: add 1–2 tablespoons of soy tare into each serving bowl (about 2 tbs per bowl recommended). If you like heat, add 1 tsp chili oil to the tare.
Proteins
Vegetables & Toppings
If using bean sprouts, briefly blanch in boiling water for 30–60 seconds or sauté in a hot skillet with a pinch of salt for 1–2 minutes.
Assemble toppings: slice green onions thinly, cut nori into strips, measure corn, bamboo shoots (or mushrooms), and toasted sesame seeds.
Assemble & Serve
Arrange the proteins and toppings: place 3–4 slices of pork (or tofu), half a soft-boiled egg, a handful of blanched greens, bean sprouts, corn, bamboo shoots (or mushrooms), and a strip of nori on each bowl.
Finish with a sprinkle of sliced green onions and 1 tsp toasted sesame seeds. Serve immediately while hot.
