Method

Prep the fish

Pat the mackerel fillets dry with paper towels. If whole fillets have any bloodline along the center, trim it out or rinse and pat dry — this reduces strong fishiness.

Lightly score the skin of each fillet with 2–3 shallow diagonal cuts (do not cut through flesh). This helps the skin crisp and prevents curling while cooking.

Evenly sprinkle about 1/2 teaspoon of kosher salt over the flesh side of each fillet and 1/2 teaspoon over the skin side. For 4 fillets the total is approximately 2 teaspoons. Let the salted fillets rest on a plate, uncovered in the refrigerator for 10–20 minutes to firm the flesh and draw out excess moisture.

Grill or broil (traditional shioyaki method)

Preheat

Position an oven rack about 6–8 inches (15–20 cm) from the broiler element and preheat the broiler to high. If using a grill, preheat to medium-high and oil the grates.

If the fillets were refrigerated while resting, wipe any pooled liquid off with a paper towel so the skin is dry. Lightly brush or rub about 1 teaspoon of neutral oil on the skin side only if your grill or broiler tends to stick; otherwise you can skip oil for a crisper, drier skin.

Place the fillets skin-side up on a foil-lined rimmed baking sheet (for broiler) or directly on the grill grates. Broil or grill until the skin blisters and becomes golden-brown and the flesh is opaque and flakes easily, about 6–8 minutes depending on thickness. For thicker fillets, check at 8 minutes and cook up to 10 minutes.

Optional: For an extra-caramelized skin, switch the fillets to skin-side down for the final 1 minute, watching carefully to avoid overcooking.

Pan-sear alternative

If you prefer pan-searing, heat a nonstick or well-seasoned cast-iron skillet over medium-high heat until hot. Add 1 teaspoon neutral oil and swirl to coat.

Place fillets skin-side down and press gently with a spatula for 10–15 seconds to keep them flat. Cook skin-side down until skin is deeply golden and crisp, about 3–5 minutes depending on thickness.

Flip carefully and cook flesh-side for 1–2 minutes until just cooked through. Remove from pan and let rest for 1 minute.

Finish & serve

Transfer the cooked mackerel to a serving platter. Serve each fillet with a wedge of lemon or sudachi.

Offer grated daikon, a small drizzle of soy sauce (if desired), and shredded shiso or chopped scallions on the side. Instruct diners to squeeze citrus over the fish and eat with the daikon as a palate cleanser.

Leftovers: Cool to room temperature, cover, and refrigerate up to 2 days. Reheat briefly under the broiler or in a hot skillet to re-crisp the skin.
