Noodles & Base
Prepare noodles
If using dried/uncooked noodles, cook according to package instructions until just al dente, then drain and rinse briefly under cold water to stop cooking. If using fresh or pre-cooked noodles, separate any clumps and set aside in a bowl tossed with 1 tsp neutral oil to prevent sticking (reserve remaining oil for cooking).
Heat a large skillet or wok over medium-high heat. Add 1 tbs neutral oil. When hot, add the prepared noodles and toss 1–2 minutes to warm and slightly char in spots. Remove noodles to a bowl and set aside.
Proteins (optional)
If using meat: add remaining 1 tbs oil to the hot pan, add sliced chicken or pork in a single layer, season lightly with 1/8 tsp salt and pepper, and stir-fry 2–4 minutes until cooked through and lightly browned. Remove and set aside with the noodles.
If using tofu: add 1 tbs oil, pan-fry tofu cubes 2–3 minutes per side until golden, then remove and set aside.
Vegetables & Add-ins
Add julienned carrot and cook 1–2 minutes to begin softening. Add chopped spinach or bok choy and bean sprouts, and stir-fry 1–2 more minutes until greens are wilted but still bright. Season lightly with 1/8 tsp salt.
Sauce & Seasoning
Whisk together soy sauce, oyster sauce, rice vinegar, chili paste (if using), sugar or honey, water or broth, sesame oil, and remaining salt and pepper in a small bowl or measuring cup.
Pour the sauce into the pan with vegetables, stir to coat and simmer for 30 seconds so flavors meld and sauce thickens slightly.
Finish & Garnish
Plate the extra noodle portion into serving bowls or plates. Top with fried/scrambled egg if using, scatter sliced green parts of scallions, sprinkle toasted sesame seeds, and serve lime wedges on the side for brightening.
Serve immediately while hot. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat gently in a skillet with a splash of water or broth to loosen the sauce.
