Prepare the Filling
In a mixing bowl, combine the cheddar and jack cheese. Add salt and pepper to taste.
Assemble the Enchiladas
Preheat the oven to 375°F (190°C). Heat the olive oil in a skillet over medium heat. Lightly fry each corn tortilla for about 10-15 seconds on each side until pliable. Remove from the skillet and place on a plate. Spoon a portion of the cheese mixture onto each tortilla, roll them up, and place seam-side down in a baking dish.
Add Sauce and Bake
Pour the enchilada sauce evenly over the rolled tortillas, ensuring they are well covered. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
Serve
Remove from the oven and allow to cool for a few minutes. Serve warm, topped with sour cream.
