Cookie Dough

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats. Measure and have all ingredients ready.

In a medium bowl, whisk together 2 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon fine sea salt until evenly combined. Set aside.

In a large bowl or the bowl of a stand mixer fitted with the paddle, beat 1/2 cup softened unsalted butter, 1/2 cup granulated sugar, and 1/2 cup packed light brown sugar at medium speed until light and fluffy, about 2–3 minutes.

Add 3/4 cup well-stirred tahini to the butter-sugar mixture and mix on medium speed until incorporated. Add 1 large egg and 1 teaspoon vanilla extract and beat until the mixture is smooth and glossy, scraping the bowl once or twice.

Reduce mixer speed to low and add the dry flour mixture in two additions, mixing just until combined. Do not overmix; stop when no streaks of flour remain.

Prepare add-ins

If not already toasted, spread 1/2 cup chopped roasted almonds and 1/4 cup pumpkin seeds on a baking sheet and toast in the oven for 4–6 minutes until fragrant, watching closely so they don't burn. Let cool.

Add mix-ins to dough

Fold 1 cup rolled oats, the cooled toasted nuts/seeds (1/2 cup chopped almonds and 1/4 cup pumpkin seeds), 1/2 cup dried cranberries, and 1/2 cup dark chocolate chips into the cookie dough by hand until evenly distributed. Use a spatula and avoid overworking the dough.

Portion cookies

Using a 1.5 tablespoon scoop or spoon, portion dough into mounds about 1.5 inches apart on the prepared baking sheets (cookies will spread a little). For uniform cookies, gently roll into balls and slightly flatten the tops.

Top and bake

Optional: press a few extra chocolate chips and a few pumpkin seeds on top of each mound for a rustic look. Sprinkle a small pinch (about 1/16 to 1/8 tsp) of coarse sea salt on each cookie. Bake in the preheated oven for 10–12 minutes, until edges are set and centers still look slightly soft.

Cool

Remove from oven and let the cookies cool on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.
