Spicy Compound Butter
Make butter
In a small bowl, combine softened unsalted butter, harissa paste, Sriracha, smoked paprika, lemon zest, sea salt, and black pepper. Use a fork to mash and blend until smooth and fully incorporated. Taste and adjust heat or salt as desired. Set aside at room temperature so it remains spreadable.
Spicy Honey Drizzle (optional)
Prepare drizzle
In a tiny saucepan or microwave-safe bowl, gently warm the honey so it's fluid (10–15 seconds in microwave or over very low heat). Stir in red pepper flakes and, if needed, a teaspoon of water to thin to a drizzling consistency. Keep warm or at room temperature.
Croissant & Assembly
Preheat and prepare croissants
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat. Using a sharp serrated knife, slice each croissant horizontally about two-thirds of the way through (so the halves stay hinged).
Apply compound butter
Brush or spread about 1 tablespoon of the spicy compound butter onto the inside of each croissant top and bottom (≈1 tbs per half). Reserve remaining compound butter for later serving if you like more heat.
Fill with cheese and meat
On the bottom half of each croissant, distribute about 3 tablespoons of grated Gruyère (approximately 2 oz). If using cheddar, sprinkle about 1 tablespoon per croissant for extra melting. Top the cheese with a slice of ham or prosciutto if using.
Bake
Place croissants on the prepared baking sheet and bake in the preheated oven for 8–12 minutes, until the croissant is warmed through, the cheese is melted and slightly bubbling, and the exterior is golden brown. Oven times vary; watch closely after 8 minutes to avoid burning.
Rest and finish
Remove croissants from oven and let rest 1–2 minutes. Open gently and add a small handful (~1/3 cup) of fresh arugula to the bottom half of each croissant. If you reserved extra compound butter, spread a thin layer on the inside top now for added flavor.
Drizzle and serve
If using the spicy honey, drizzle about 1/2 tablespoon over each assembled croissant (or serve on the side). Serve immediately while warm.
