Place the slices butter-side down on the hot skillet. Toast 2–3 minutes until golden and crisp, then flip and cook the other side 1–2 minutes just to warm through. Remove to a cutting board. While warm, sprinkle sea salt and a light grind of black pepper over the toasts.
Spread & Topping
Soften and flavor goat cheese
Place the goat cheese in a small bowl and stir with the honey until smooth and spreadable. If using, fold in the lemon zest to brighten the cheese.
Assemble toasts
While the bread is still slightly warm, spread about 2 oz (≈2 generous tablespoons) of the honeyed goat cheese on each slice, covering the surface but leaving a small edge.
Add apricot jam
Spoon about 2 tablespoons of apricot jam onto each cheese-covered slice. For a cleaner presentation, warm the jam briefly (10–15 seconds) in the microwave or a teaspoon in a small pan so it spreads easily, then gently spread or leave slightly domed for texture.
Finish and garnish
Scatter the toasted sliced almonds evenly over the four toasts, then sprinkle the fresh thyme leaves on top if using. Drizzle a barely-there thread of extra honey (about 1 tsp total across slices) for shine and a hint of sweetness. Serve immediately so the toast stays crisp.
