Cook tapioca pearls
Bring 6 cups water to a rolling boil in a medium pot. Add 1 cup tapioca pearls and stir gently to prevent sticking. When pearls float, cover and cook at medium-low simmer for 20–25 minutes (follow package instructions if different), stirring occasionally. After cooking, remove from heat, cover, and let pearls sit 10 minutes.
Make brown sugar syrup
While pearls cook, combine 0.75 cups brown sugar and 0.5 cups water in a small saucepan. Bring to a simmer, stirring until sugar dissolves. Simmer 2 minutes until slightly thickened, then remove from heat and let cool slightly.
Sweeten cooked pearls
Drain the rested tapioca pearls and immediately transfer to the warm brown sugar syrup. Toss gently so pearls are evenly coated. Let sit 5–10 minutes to absorb syrup while you prepare the drink. Keep warm or serve chilled based on preference.
Base Tea / Liquid
Brew green tea concentrate
Bring 4 cups water to a near boil, remove from heat and add 2 tablespoons green tea leaves (or 2 tea bags). Steep 3–4 minutes for bright, slightly astringent flavor. Strain leaves or remove tea bags. Cool to room temperature (about 15–20 minutes) or chill in the fridge for faster cooling.
Make lemonade base
In a pitcher, combine 1 cup fresh lemon juice and 2 cups filtered water. Sweeten to taste with your chosen sweetener: for standard, add 1 cup granulated sugar and stir until dissolved; for honey, warm honey slightly and whisk it in; for sugar-free, dissolve 3 tsp stevia/erythritol blend. Taste and adjust sweetness so lemonade is pleasantly bright but not overly sweet.
Combine tea and lemonade
Mix the cooled green tea concentrate and the lemonade base in the pitcher. This creates the classic 'boba lotus' base — a refreshing tea-lemonade hybrid. Adjust ratio to taste: more tea for earthier notes, more lemonade for brightness.
Variant Color & Flavor Add-ins
Pink Lemonade / Pink Lotus
For Pink Lemonade or Pink Lotus, add 0.5 cup pink lemonade syrup or 1 tsp pitaya powder to the mixed tea-lemonade. Whisk until fully incorporated and a uniform pink hue is achieved. If using pitaya powder, a pinch of extra sweetener can balance the tart fruitiness.
Sky Blue Lotus / Blue Lotus
For Sky Blue Lotus or Blue Lotus, whisk 1 tsp blue spirulina powder into a small amount (2–3 tablespoons) of the tea-lemonade until smooth, then stir back into the pitcher. Blue spirulina provides a stable, natural blue color; avoid overheating to preserve color and nutrients.
Gold Lotus
For Gold Lotus, whisk 1/4 tsp turmeric powder into 1–2 tablespoons warm lemonade, then strain into the pitcher to avoid clumps. Optionally stir in a very small pinch of edible gold dust for shimmer. If using turmeric, add a touch of honey (1–2 tsp) to balance earthiness.
Mystical / Sunshine Boba Lotus (marble/gradient look)
To create a layered 'mystical' look, divide the prepared base into two small bowls. Tint one portion pink (pitaya or pink lemonade syrup) and the other blue (blue spirulina). Pour one color slowly over the back of a spoon onto a glass with boba and ice, then gently pour the other color to create a soft gradient. Stir lightly before drinking to blend flavors.
Sugar-free option
Use the brewed green tea and lemonade base sweetened with 3 tsp stevia/erythritol. Sweeten the boba syrup with a sugar-free syrup or omit syrup and serve pearls plain (they will be less sweet). Keep the rest of the steps identical.
Assembly & Garnish
Assemble the drink: divide sweetened tapioca pearls among 4 serving glasses (about 1/4 cup pearls per glass). Add a handful of ice (approx. 1/2 cup per glass). Pour the prepared Lotus beverage (tea-lemonade, with chosen color/flavor) over the ice, filling each glass to about 3/4 full. Leave room for garnish.
Garnish each glass with a lemon slice, 2 dried lotus petals or edible flower pieces, and 2 mint leaves. For Gold Lotus, dust a tiny pinch of edible gold dust on top for shimmer. Serve with a wide boba straw and stir before sipping.
