Prepare

Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line bottoms with parchment; grease parchment and dust with a little gluten-free flour or cocoa powder.

Combine dry ingredients

In a large bowl, sift or whisk together gluten-free flour blend, cocoa powder, granulated sugar, baking powder, baking soda, and salt until evenly combined and aerated.

Combine wet ingredients

In a separate bowl, whisk eggs, whole milk, oil, and vanilla extract until smooth.

Mix batter

Slowly add the wet mixture into the dry ingredients, stirring until mostly combined. Pour in the hot brewed coffee and mix until the batter is smooth and slightly thin—the coffee intensifies chocolate flavor and yields a moist crumb.

Bake

Divide batter evenly between the prepared 8-inch pans. Bake in preheated oven for 22–28 minutes, or until a toothpick inserted into the center comes out with moist crumbs (not wet batter). Rotate pans halfway through baking for even rise if your oven is inconsistent.

Cool

Allow cakes to cool in pans on a wire rack for 10–15 minutes. Run a knife around edges, invert onto racks, remove parchment, and let cool completely (about 1 hour) before assembling. If you want perfectly level layers, chill the cakes briefly (30 minutes) and trim domes.

White Chocolate Mousse (filling)

Bloom gelatin

If using gelatin, sprinkle 1 tsp gelatin over 2 tbsp cold water in a small bowl and let bloom for 5 minutes. If using powdered agar, follow package instructions to dissolve in warm liquid.

Melt white chocolate

Place the 8 oz chopped white chocolate in a heatproof bowl. Heat 1/2 cup of the heavy cream until very hot but not boiling (scalded). Pour the hot cream over the white chocolate and let sit 1 minute, then stir gently until fully melted and smooth.

Incorporate gelatin and flavor

If using gelatin, warm the bloomed gelatin briefly (10–15 seconds in microwave) until liquid and stir into the white chocolate mixture until fully incorporated. Stir in vanilla and powdered sugar (if using) and allow mixture to cool to room temperature but still fluid.

Whip remaining cream & fold

Whip the remaining 1 cup of heavy cream to soft-medium peaks. Fold one-third of the whipped cream into the cooled white chocolate mixture to loosen it, then gently fold in the remaining whipped cream until no streaks remain and the mousse is light and airy. Chill for 15–30 minutes to firm slightly if needed before assembling (do not over-chill or it will be difficult to spread).

Chocolate Ganache & Drizzle

Prepare dark ganache

Place 8 oz chopped dark chocolate in a bowl. Heat 3/4 cup heavy cream until simmering (do not boil) and pour over dark chocolate. Let sit 1–2 minutes, then stir gently until smooth and glossy. Stir in 1 tablespoon softened butter for additional shine and smoothness. Allow ganache to cool at room temperature until thickened but still pourable (about 20–30 minutes).

Prepare white chocolate drizzle

Melt the 3 oz white chocolate gently (double boiler or low-power microwave bursts). Stir in 1 tsp neutral oil to thin slightly for drizzle consistency. Transfer to a piping bag or squeeze bottle for controlled drizzle. Keep warm in a thermos or over very gently warm water to maintain fluidity.

Assembly & Finishing

Level & syrup (optional)

If cakes have domes, level them with a serrated knife. Brush the cut surface of each cake layer lightly with simple syrup (use sparingly) to retain moisture.

Layer with mousse

Place one cake layer on your serving plate or cake board. Spread half of the white chocolate mousse evenly over the layer (about 1/2 of mousse). Place the second cake layer on top and press gently to adhere. If making a three-layer cake, split cake into three thinner layers and distribute mousse accordingly.

Crumb chill (optional)

Chill the assembled cake in the refrigerator for 15–20 minutes to firm the mousse and reduce crumbs when coating with ganache.

Pour ganache

Place chilled cake on a wire rack over a sheet pan to catch drips. Pour the cooled but pourable dark ganache over the center of the cake, using an offset spatula to distribute it evenly and allow it to drip naturally down the sides. Smooth the top and sides as desired. If ganache firms too quickly, warm briefly in small increments and continue.

Drizzle white chocolate

Using the prepared white chocolate in a piping bag or squeeze bottle, drizzle thin lines or a decorative pattern over the ganache while it's still slightly tacky so the drizzle adheres. For a professional look, make concentric lines and drag a toothpick perpendicular through the lines for a feathered pattern.

Garnish & chill

Add optional chocolate shavings or cocoa nibs to the top or base of the cake. Chill cake for at least 30 minutes to set ganache and mousse. Return to room temperature 15–20 minutes before serving for best texture.
