Prepare greens

Combine artisan mixed greens and arugula in a large salad bowl. Gently toss to aerate and remove any large stems.

Assemble primary components

Add the marinated beets evenly over the greens. Scatter mandarin orange segments over the salad. Crumble goat cheese over top in even dollops.

Pistachio Butter Dressing

Toast pistachios (optional)

Preheat a small skillet over medium heat. Add the pistachios and toast, stirring frequently, until fragrant and lightly browned, 3–4 minutes. Remove from heat and let cool slightly. (Toasting deepens flavor but is optional for speed.)

Make pistachio butter

Place the toasted pistachios in a food processor. Pulse until broken down, then run the processor continuously. Scrape down the sides as needed. As the nuts form a paste, add 2 tablespoons olive oil, lemon juice, honey, salt, and pepper. Continue processing; add the remaining 1 tablespoon olive oil and 1 tablespoon water in small increments to reach a smooth, spreadable consistency (about 1–2 minutes total). Taste and adjust salt, lemon, or honey. The final dressing should be thick but spoonable.

Adjust consistency

If dressing is too thick to drizzle, thin with an additional teaspoon or two of water or olive oil until it reaches desired consistency for drizzling or small dollops.

Balsamic Drizzle

Reduce or mix balsamic

If you prefer a syrupy balsamic, pour 3 tablespoons balsamic vinegar into a small saucepan with 1 teaspoon brown sugar or maple syrup. Simmer over low heat until slightly reduced and syrupy, about 4–6 minutes. Cool slightly before using. Alternatively, simply whisk the balsamic with the sweetener until dissolved and use at room temperature.

Dress the salad: Spoon or dollop the pistachio butter dressing around the salad in small amounts (about 1–1.5 tablespoons per serving) so each bite gets pistachio flavor. Drizzle the balsamic reduction lightly over the top in a thin stream—about 1/2 tablespoon per serving. Gently toss two to three times to coat, or leave arranged for a composed presentation.

Garnish and season: Sprinkle the coarsely chopped pistachios across the salad for crunch. Finish with a light sprinkle of sea salt flakes and freshly ground black pepper to taste.

Serve immediately so greens remain crisp. Optionally serve extra pistachio dressing and balsamic reduction at the table.
