Method
Tortilla Dough (for Puffy Shells)
Make dough
Whisk together all-purpose flour, baking powder, and salt in a medium bowl until evenly combined.
Cut in fat
Add chilled lard or shortening and use a pastry cutter or two forks to work it into the flour until the mixture resembles coarse crumbs (pea-sized pieces).
Form dough
Gradually pour warm water into the flour-fat mixture while stirring with a fork until a shaggy dough forms. Use your hands to knead briefly (about 1 minute) in the bowl until a smooth, pliable dough forms. If too sticky, add up to 1 tbsp more flour; if too dry, add a teaspoon of warm water at a time.
Rest
Cover the dough with plastic wrap or a towel and let rest at room temperature for 20–30 minutes to relax the gluten and hydrate the flour.
Divide and roll
After resting, divide dough into 8 equal pieces (for 4 servings, two shells per person). Roll each piece into a ball, then flatten and roll into 6–7 inch circles about 1/8 inch thick on a lightly floured surface. Keep rolled tortillas covered with a damp towel while you work to prevent drying.
Cook Filling
Sauté aromatics
Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add diced onion and cook, stirring, until softened and translucent, about 3–4 minutes. Add minced garlic and cook 30 seconds until fragrant.
Brown the beef
Add ground beef to the skillet, breaking it up with a spatula. Cook until browned with no pink remains, about 6–8 minutes.
Season and simmer
Stir in chili powder, ground cumin, smoked paprika, kosher salt, black pepper, and tomato paste. Cook 1 minute to bloom the spices. Add beef broth (or water) and lime juice, reduce heat to medium-low, and simmer 3–4 minutes until slightly thickened. Taste and adjust salt, pepper, or heat (add hot sauce if desired). Remove from heat and keep warm.
Prep fresh filling components
While beef simmers, shred iceberg lettuce, grate cheddar, dice tomato, and slice jalapeños if using. Combine sour cream, salsa verde (or salsa rojo), and hot sauce in a small bowl to make a quick crema; season to taste with a pinch of salt and additional lime if desired.
Fry Puffy Shells & Assemble
Heat oil
Pour about 1/2 to 1 cup vegetable oil into a heavy skillet (cast iron recommended) — you want enough so the tortilla edge can puff but not necessarily fully deep-fried. Heat the oil over medium-high until it reaches 350°F (175°C) or a small piece of dough sizzles immediately.
Fry tortillas to puff
Working one at a time, carefully place a rolled tortilla into the hot oil. Using tongs or a slotted spatula, press the center of the tortilla gently so steam forms and the tortilla puffs into a pocket. Flip once or twice so both sides are golden-brown and puffed, about 30–60 seconds per side. If oil is too hot and browning too fast, lower heat slightly. Remove and drain on a wire rack or paper towels. Repeat with remaining tortillas. (If oil level is shallow and tortillas don’t fully puff, you can spoon hot oil over the top while they cook to encourage puffing.)
Crisp edges (optional)
For firmer shells, after puffing, briefly return each shell to slightly hotter oil (or a 400°F oven for 2–3 minutes) to crisp edges — watch carefully to avoid burning.
Assemble tacos
Hold a warm puffed shell open and spoon about 2–3 tablespoons of the cooked seasoned beef into each shell. Top with shredded lettuce, diced tomato, a generous sprinkle of grated cheddar, sliced pickled jalapeños (if using), and a drizzle or dollop of the sour cream-salsa crema. Garnish with chopped cilantro and serve immediately with lime wedges on the side.
