Prep Potatoes

Rinse cut fries in cold water until water runs clear to remove excess starch. Soak fries in a large bowl of cold water for 30 minutes (or up to 2 hours) to ensure crispiness. Drain and pat completely dry with kitchen towels.

First Fry (Blanch)

Heat vegetable oil in a deep pot or fryer to 160°C (320°F). Fry potatoes in batches for 4–5 minutes until tender but not browned. Remove with a slotted spoon and drain on paper towels. Let cool 10 minutes.

Seasoning

While fries are cooling, toss them lightly with salt, black pepper, and smoked paprika so seasoning adheres.

Final Fry

Increase oil temperature to 190°C (375°F). Fry the blanched fries in batches for 2–3 minutes until golden-brown and crisp. Drain on paper towels and season immediately with a pinch more salt if needed.

Marinate Protein

Combine olive oil, minced garlic, ground cumin, chili powder, lime juice, salt, and black pepper in a bowl. Add chicken breasts or sliced steak (or both if doing a mix). Toss to coat and let marinate 15–30 minutes at room temperature (or up to 2 hours refrigerated).

Grill or Pan-Sear

Heat a grill griddle or heavy skillet over medium-high heat until very hot. For chicken: cook 4–6 minutes per side (depending on thickness) until internal temperature reaches 74°C (165°F). For steak: sear about 2–4 minutes per side for medium-rare to medium, longer if desired. Rest cooked protein 5 minutes, then slice thinly against the grain if steak, or cut chicken into strips.

Assembly & Toppings

Place a generous portion of hot fries on each serving plate or on a shared platter.

Top fries with sliced grilled steak, grilled chicken strips, or a mix of both distributed evenly over the fries.

Sprinkle diced white onion, diced tomato, and pickled jalapeños over the proteins and fries.

Scatter shredded cheese over the hot fries and meat so it softens and melts; if desired, place under a broiler for 1–2 minutes to fully melt (watch closely).

Drizzle chipotle mayo or salsa roja in a thin stream over the top. Add dollops of sour cream and sprinkle chopped cilantro. Serve immediately with lime wedges on the side for squeezing over.
