Prepare sausage
Remove linguica from refrigerator and let sit at room temperature for 10–15 minutes. This helps it cook evenly.
Score casings (optional)
If you prefer, lightly score the casing of each link with shallow diagonal cuts every 1 inch (do not cut through). This prevents bursting and helps render fat.
Pan-sear or grill
Heat a large skillet or grill to medium heat. If using a skillet, add 1 teaspoon neutral oil and let it warm. Add the linguica and cook, turning every 3–4 minutes, until nicely browned on all sides and an instant-read thermometer inserted into the center reads 160°F (71°C), about 12–16 minutes depending on thickness. If using a grill, place over medium heat and cook similarly, moving to cooler part of grill if flare-ups occur.
Rest
Transfer cooked linguica to a cutting board and let rest for 5 minutes to redistribute juices before slicing or serving whole.

After removing the cooked linguica from the skillet, leave about 1 tablespoon of rendered fat in the pan (or add the olive oil if pan is dry). Heat over medium. Add the sliced onion and bell pepper and sauté until softened and lightly caramelized, about 5–7 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.
Deglaze
Pour in the white wine or chicken broth to deglaze the pan, scraping up any brown bits from the bottom with a wooden spoon. Let simmer until liquid is reduced by about half, about 2–3 minutes.
For serving
Leftovers: Refrigerate cooled linguica in an airtight container for up to 4 days. Reheat gently in a skillet over low heat or in a 325°F (160°C) oven until warmed through.
