Method
Prep - noodles, vegetables, protein
Cook vermicelli
Bring a medium pot of water to a boil. Remove from heat, add rice vermicelli and soak according to package instructions (typically 3–5 minutes) until tender. Drain in a colander and rinse under cold water to stop cooking. Drain well and toss lightly with a drizzle of sesame oil to prevent sticking; set aside.
Prepare vegetables and herbs
Wash and dry lettuce leaves, mint and cilantro. Julienne the carrot and thinly slice the cucumber. Rinse and drain bean sprouts. Arrange components on a platter for easy assembly.
Prepare protein (choose one)
Shrimp: If using shrimp, cook (boil or steam) until opaque and cooked through, then halve each shrimp lengthwise. Chicken: Grill or pan-sear chicken breasts seasoned with salt and pepper until internal temperature reaches 74°C (165°F), let rest 5 minutes and slice thinly. Tofu: Press tofu to remove excess moisture, slice into strips, season lightly and pan-fry in 1–2 tbs oil until golden on all sides. Keep warm or refrigerate briefly if assembling cold.
Peanut dipping sauce
In a bowl, combine peanut butter, hoisin sauce, soy sauce, rice vinegar, brown sugar (or honey), lime juice and minced garlic. Whisk while adding warm water, 1 tablespoon at a time, until the sauce reaches a smooth, dippable consistency (about 3–4 tbs). Taste and adjust: add chili garlic sauce for heat, more lime for acidity, or a touch more water to thin. Stir in sesame oil if using. Transfer to a serving bowl and sprinkle with crushed roasted peanuts.
Assemble spring rolls
Set up an assembly station: shallow wide bowl or pie dish with warm water for softening rice paper, a clean damp kitchen towel or cutting board, and plates for finished rolls.
Place 1 lettuce leaf in the center third of the rice paper, leaving about 2 inches (5 cm) of space at the near edge for folding. On top of the lettuce, layer a small handful (about 2 tablespoons) of vermicelli, a few carrot julienne, cucumber slices, a small pinch of bean sprouts, 2–3 mint leaves and 2–3 cilantro sprigs.
Place your chosen protein on top of the vegetables: 2 shrimp halves (arranged so the orange side faces out), or 1/4 cup sliced chicken, or 2–3 tofu strips. Do not overfill—leave room to fold.
Fold the near edge of the rice paper over the filling, tuck in gently, then fold both sides in toward the center, and continue rolling away from you to form a neat cylinder. Press briefly to seal. Place seam-side down on a serving plate. Repeat with remaining wrappers and fillings.
If not serving immediately, cover the completed rolls with a damp towel to keep them tender (do not refrigerate stacked tightly, as rice paper can become overly sticky).
Serve
Arrange rolls on a platter with the peanut dipping sauce. Garnish the sauce with extra crushed peanuts and provide lime wedges on the side. Serve immediately; instruct diners to dip rolls into the peanut sauce before eating.
