Sushi rice
Rinse and cook rice
Rinse the sushi rice under cold water until the runoff is nearly clear (about 4–6 rinses) to remove excess starch. Drain. Combine rinsed rice and 360 ml water in a rice cooker or a medium pot. If using a pot, bring to a boil, then reduce to low, cover, and simmer 15 minutes. Remove from heat and let stand, covered, 10 minutes.
Season rice
While the rice cooks, warm rice vinegar, sugar, and salt in a small saucepan or microwave just until sugar dissolves. Transfer the cooked rice to a large shallow bowl, gently fold in the vinegar mixture with a rice paddle or wooden spoon using cutting-and-folding motions to avoid crushing grains. Fan the rice as you fold to cool to room temperature. Cover with a damp cloth until ready to assemble.
Spicy salmon filling
Prepare the salmon: Pat the diced salmon dry with paper towels to remove excess moisture. Place in a chilled bowl.
Make the spicy mixture: Add Japanese mayonnaise, Sriracha, gochujang (if using), soy sauce, sesame oil, and kosher salt to the salmon. Mix gently but thoroughly so the salmon is evenly coated. Fold in thinly sliced scallions and toasted sesame seeds. Taste and adjust heat or salt — add more Sriracha for heat or a touch more mayo to mellow it.
Chill: Cover and refrigerate the filling for 10–15 minutes to let flavors meld while you prepare the crispy element and nori.
Crispy elements
Crisp the panko: Heat 120 ml neutral oil in a small skillet over medium heat until shimmering but not smoking (about 170–180°C / 340–355°F). Add panko breadcrumbs and toast, stirring constantly, until golden brown and crisp, 3–5 minutes. Watch closely to prevent burning.
Drain and season: Transfer toasted panko to a plate lined with paper towels to drain. Sprinkle lightly with a pinch of salt if desired. Let cool completely — the panko should be crisp and brittle.
Assembly
Prepare nori: Cut each full nori sheet in half crosswise to make two rectangles approximately 9x10 cm (adjust to hand size). Lightly toast halves over an open flame or in a dry skillet for 3–5 seconds to ensure crispness if not already toasted.
Shape rice: Wet your hands with a mixture of water and a little rice vinegar (to prevent sticking). Take about 2–3 tablespoons of sushi rice and shape it into a small oblong mound on one short end of a nori rectangle, leaving a border at the edges.
Add fillings: On top of the rice mound, place a small strip (about 1–2 tablespoons) of the spicy salmon mixture. Add a few julienned cucumber sticks and 2–3 thin slices of avocado beside the salmon. Add one shiso leaf or a small sprig of cilantro if using. Sprinkle 1 teaspoon of the toasted panko over the salmon to give a crisp contrast.
Roll handroll: Fold the nori into a cone/handroll shape starting at the short end with the rice and filling, rolling diagonally to form a cone so the filling is contained. Seal the edge by brushing a tiny amount of water along the nori edge and pressing gently. Place seam-side down to rest for a minute so it holds shape.
Finish and serve: Arrange handrolls on a platter with pickled ginger and wasabi on the side. Serve immediately to preserve nori crispness. If making ahead, keep components separate and assemble just before serving to avoid soggy nori.
