Method
Prepare Glass & Fruit
Chill glass
Place a highball or wine glass in the freezer for 5–10 minutes, or fill it with ice water while you prepare the ingredients to ensure the drink stays cold.
Place the sliced strawberry or peach in the bottom of a mixing glass or cocktail shaker. Add the fresh yuzu or lemon juice and the simple syrup. Gently muddle 2–3 times — just to release fruit flavor, not to pulverize.
Build the Drink
Discard the ice water from the chilled serving glass if used and add 4–6 fresh ice cubes (or fill to about two-thirds for a wine glass).
Strain the muddled fruit + juice mixture over the ice into the serving glass. Use a fine strainer if you prefer fewer solids; otherwise pour all for extra texture.
Pour 12 oz chilled Ozeki Hana Awaka gently over the back of a spoon into the glass to preserve carbonation. If you want brighter bubbles or a lighter alcohol presence, top with up to 2 oz cold sparkling water or plain soda.
Finish & Garnish
Give the drink a very gentle stir (1–2 turns) to integrate the muddled fruit mixture with the sake without flattening the bubbles.
Garnish with a fresh mint sprig tucked at the side and an edible flower or a thin citrus wheel floated on top. If using a strawberry slice, you can also thread it on the rim.
Serve immediately while effervescence is lively.
