Method
Preparation
Heat water
Bring fresh filtered water to a temperature of about 170–180°F (77–82°C). If you don't have a thermometer, heat water until small bubbles begin to form but before a rolling boil, then remove from heat.
Steeping & Presentation
Pour
Carefully pour 14–16 oz (approx. 425–475 ml) of the hot water (175°F) slowly over the bundle, pouring from the side so the bundle is gently bathed and can begin to expand.
Initial steep
Allow the bundle to steep undisturbed for 3–5 minutes. During this time the bundle will slowly expand and 'bloom.' For a lighter flavor, steep toward 3 minutes; for fuller flavor, steep up to 5 minutes. Resist stirring so the bloom remains visually intact.
Second infusion (optional)
After the first infusion, you may pour out the brewed tea into cups, then add another 14–16 oz of 175°F water to the same bundle for a second infusion. Extend the steep time by 30–60 seconds on subsequent infusions. Quality flowering white tea can typically be infused 2–3 times.
Finishing & Serving
Serve
Pour the steeped tea into warmed cups and serve immediately to showcase the aroma and appearance. Present the clear teapot with the remaining bundle as a visual centerpiece if serving multiple guests.
Storage of unused bundle
If you plan on re-steeping later the same day, keep the used bundle in the teapot and refrigerate with a splash of fresh water for up to 12 hours; for best flavor, re-steep within a few hours. Discard after 2–3 infusions or when flavor diminishes.
