Prepare the Udon Noodles

Bring a large pot of water to a boil. Add the udon noodles and cook according to the package instructions, typically for about 8-10 minutes, until they are tender but firm.

Cool the Noodles

Once cooked, drain the noodles in a colander and rinse them under cold running water to stop the cooking process. This will also help to remove excess starch. After rinsing, place the noodles into a bowl filled with ice water to chill for a few minutes.

Prepare the Sauce

In a small saucepan, combine the dashi stock, soy sauce, and mirin. Heat gently over low heat until warmed, but do not let it boil. Stir occasionally to combine well.

Serve the Zaru Udon

Drain the chilled udon noodles from the ice water and place them on a serving plate or bamboo mat. Pour the warm dipping sauce into small bowls for individual servings. Garnish the udon with shredded nori and chopped green onions. Offer wasabi on the side for those who enjoy a bit of heat.
