Tempura Preparation
Prepare the Batter
In a mixing bowl, combine the all-purpose flour and cornstarch. In a separate bowl, whisk together the ice-cold water and egg yolk. Slowly pour the wet ingredients into the dry ingredients while gently stirring. Do not overmix; the batter should be lumpy.
Heat the Oil
In a deep saucepan, heat vegetable oil to 350°F (175°C). Use enough oil to submerge the tempura vegetables.
Coat and Fry the Vegetables
Dip your choice of vegetables (such as sweet potatoes, bell peppers, and zucchini) into the tempura batter. Carefully place them in the hot oil and fry in batches until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
