Prepare the Sushi Rice
Rinse and cook the sushi rice.
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear, about 2-3 times. This removes excess starch.
Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. If you don't have a rice cooker, bring the water and rice to a boil in a saucepan, cover, and reduce the heat to low. Cook for about 18 minutes, or until the rice is tender and the water is absorbed.
Season the Rice
Create a vinegar mixture and fold it into the rice.
In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve the sugar and salt, then let it cool slightly.
Once the rice is cooked, transfer it to a large bowl. Gradually fold in the vinegar mixture with a spatula, being careful not to mash the rice. Allow the rice to cool to room temperature.
Prepare the Hamachi
Slice the fresh hamachi.
Using a sharp knife, slice the hamachi into thin sashimi-style pieces, about 1/4 inch thick.
Assemble the Hamachi Don
Layer the sushi rice and hamachi in a bowl.
Scoop a generous amount of seasoned sushi rice into a bowl.
Arrange the sliced hamachi beautifully on top of the rice.
Drizzle with soy sauce, sprinkle with sesame seeds, and garnish with chopped scallions.
Serve with wasabi and pickled ginger on the side.
