Mince and measure
Finely dice 1/2 cup yellow onion, mince 2 tsp garlic, and chop 2 tablespoons fresh parsley. Measure out spices, breadcrumbs and milk so everything is ready.

If using ground pork or Italian sausage as the second meat, remove sausage casing (if present) and break up with a fork so it mixes easily with the turkey.
Mix Meat Mixture

Combine wet ingredients
In a large bowl whisk the egg with 2 tablespoons milk until combined. Stir in the breadcrumbs and let sit 1–2 minutes to hydrate.

Add aromatics and seasonings
Add the diced onion, minced garlic, chopped parsley, 1 tsp salt, 1/2 tsp pepper, 1 tsp oregano, 1/2 tsp smoked paprika and 1/4 tsp red pepper flakes (if using) to the breadcrumb mixture. Mix briefly to distribute.

Add meats and combine
Add 1 lb ground turkey and 1/2 lb secondary meat to the bowl. Using clean hands or a large spoon, gently fold the mixture until just combined — avoid overworking to keep the texture tender. Taste (cook a very small 1/2 teaspoon patty in a skillet) and adjust salt/pepper if needed.

Portion the mixture into 6 equal patties (about 4–4.5 ounces each) or form into a single loaf if preferred. Press gently to form even shapes about 3/4-inch thick. Place on a tray and refrigerate 15–20 minutes to firm up — this helps them hold shape when cooking.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add patties in a single layer without crowding. Cook 3–4 minutes undisturbed until a golden crust forms, then flip and cook 3–4 minutes more.

Finish with broth
Reduce heat to medium-low and add 1/4 cup low-sodium broth to the pan, cover and cook 2–4 minutes until internal temperature reaches 165°F (74°C) and patties are cooked through. Uncover and cook 30–60 seconds to reduce any excess liquid and re-crisp the exterior if desired.

Transfer patties to a plate and let rest 2–3 minutes. Serve with lemon wedges for brightness if desired. These pair well with roasted vegetables, a salad, or on a toasted bun with lettuce and tomato.
