    Trim and wash

    Rinse the green beans under cold water. Trim off the stem ends (and tail ends if desired) so the beans are uniform in length.

    Blanch

    Bring a large pot of water to a rolling boil and add 1 tablespoon kosher salt. Add the trimmed green beans and blanch until bright green and just tender-crisp, about 3 to 4 minutes depending on thickness.

    Shock

    While the beans blanch, fill a large bowl with 4 cups ice and cold water. As soon as the beans reach the desired doneness, use a slotted spoon or a strainer to transfer them to the ice bath to stop cooking. Let chill 2 minutes, then drain thoroughly and pat dry with a clean kitchen towel or paper towels.

Seasoning & Finishing

    Toast almonds (if not pre-toasted)

    In a small dry skillet over medium heat, add the sliced almonds and toast, stirring frequently, until fragrant and lightly golden, 2 to 3 minutes. Remove from pan and reserve.

    Sauté garlic

    In a large skillet over medium heat, add the butter and olive oil. When the butter is melted and begins to foam, add the minced garlic and sauté briefly, about 30 to 45 seconds, until fragrant but not browned.

    Warm the beans

    Add the drained green beans to the skillet and toss to coat in the garlic butter. Sauté for 2 to 3 minutes until heated through and the beans take on a bit of color in spots. Stir frequently to prevent burning.

    Finish and season

    Remove the skillet from heat. Add the lemon zest, lemon juice, toasted almonds, red pepper flakes, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Toss well to combine and taste; adjust salt and pepper if needed.

    Serve

    Transfer the green beans to a serving dish and serve warm. These are best served immediately but can be kept warm in a low oven (200°F / 95°C) for up to 20 minutes.
