Preheat oven to 425°F (220°C). Wash baby potatoes and cut any larger ones in half so pieces are roughly uniform (about 1-inch pieces). Pat dry.

Toss potatoes with 1 tablespoon olive oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper until evenly coated.

Spread potatoes cut-side down on a small baking sheet or ovenproof dish in a single layer. Roast for 18–22 minutes, turning once halfway, until golden brown and tender when pierced with a fork. Keep warm.

While potatoes roast, heat a medium nonstick skillet over medium heat. Add 1 tablespoon butter and let it melt and foam.

Add 3 mild breakfast sausage links to the skillet, spacing them apart. Cook, turning occasionally, until browned on all sides and cooked through (internal temperature 160°F / 71°C) about 10–12 minutes depending on thickness. If sausages brown too quickly, reduce heat to medium-low and cover for 2–3 minutes to finish cooking. Transfer to a plate and keep warm.

In a small bowl, crack 1 large egg, add 1 tablespoon milk, 1 teaspoon salt and 1/8 teaspoon pepper (optional). Whisk until blended and slightly frothy.

For a soft scrambled egg: let eggs sit undisturbed 10–15 seconds, then gently stir with a spatula, pushing cooked edges toward center. Fold until soft curds form but still moist, about 45–60 seconds total. Remove from heat immediately and keep warm. Alternatively, cook to child's preferred doneness.
