    Prepare brisket

    Pat the brisket dry with paper towels. Trim any excessively thick hard fat, leaving about 1/4 inch of fat cap to keep the meat moist during cooking.

    Make rub

    In a small bowl combine kosher salt, coarsely ground black pepper, garlic powder, onion powder, paprika, and brown sugar. Mix thoroughly so sugar is evenly distributed.

    Season brisket

    Rub the vegetable oil all over the brisket to help the spice mixture adhere. Massage the rub evenly over all surfaces of the brisket, pressing it into the meat. Let rest at room temperature for 30 minutes or refrigerate up to overnight (if refrigerating, bring to room temperature 1 hour before cooking).

    Preheat oven or smoker

    For oven: preheat to 275°F (135°C). For smoker: preheat to 225–250°F (107–121°C) and prepare wood chips (oak, hickory, or pecan are good).

    Sear (optional)

    If you want a deeper crust, heat a large ovenproof skillet or roasting pan over medium-high heat and add a tablespoon of oil. Sear the brisket fat-side down for 3–4 minutes until browned, then sear the other sides briefly. This step is optional for low-and-slow smokers.

    Arrange for roasting or smoking

    Place the sliced onion and smashed garlic in the bottom of a roasting pan or braising pan. Nestle the brisket on top fat-side up. Add beef broth, apple cider vinegar, and Worcestershire sauce to the pan around (not over) the brisket. Tuck thyme sprigs and bay leaves into the liquid and around the meat.

    Cook low and slow

    Cover tightly with foil or a lid. In the oven, roast at 275°F (135°C) until internal temperature reaches 195–205°F (90–96°C). For a 5 lb brisket, expect 4.5–6 hours; begin checking at 4 hours. In a smoker, cook at 225–250°F (107–121°C) until the same internal temperature is reached. If smoking, you may unwrap and spritz with a mixture of half beef broth and half apple cider vinegar every hour after the first 3 hours to maintain moisture and build bark.

    Check for tenderness

    When the brisket reaches 195–205°F, test tenderness by inserting a probe or fork — it should slide in with little resistance like softened butter. If it’s not tender, continue cooking and checking every 30 minutes.

    Rest the brisket

    Remove the brisket from the oven/smoker. Transfer to a cutting board and tent loosely with foil. Let rest for 45–60 minutes to allow juices to redistribute. For an even juicier result, wrap in a towel and place in a cooler to keep warm for up to 2 hours (called the faux cambro method).

    Finish and carve

    If desired, skim fat from the pan juices and whisk in butter to make a glossy sauce. Remove bay leaves and thyme stems. Slice the brisket against the grain: the flat yields thin slices, and the point can be sliced against its grain or chopped for serving. Serve with pan juices spooned over slices.

    Storage and reheating

    Cool leftover brisket to room temperature within 2 hours, then refrigerate in an airtight container up to 4 days or freeze up to 3 months. Reheat gently in a covered pan with a splash of beef broth at 275°F until warm, or slice and reheat in sauce on the stovetop over low heat.
