BREWING DIRECTIONS
1. Mashing
In a large brew kettle, heat 5 liters of water to 160°F (71°C). Add the Pale Malt and Crystal Malt to the kettle, stirring well. Maintain the temperature at 150°F (65°C) for 60 minutes.
2. Sparging
After mashing, sparge the grains with hot water to collect the wort. Aim for a total volume of approximately 5 liters.
3. Boiling
Bring the wort to a boil and add the Citra hops. Boil for 60 minutes. Add the Cascade hops in the last 15 minutes of the boil.
4. Cooling
Cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast and seal the vessel with an airlock. Allow to ferment at 68-72°F (20-22°C) for 2 weeks.
6. Bottling
After fermentation, transfer the beer to a bottling bucket and add priming sugar. Bottle the beer and cap the bottles. Allow to carbonate for another 2 weeks.
