Preparing the Seafood

Marinate the Seafood
In a bowl, combine buttermilk, salt, and black pepper. Add the shrimp and catfish fillets, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Breading
In a shallow dish, mix together the flour, cornmeal, Cajun seasoning, and additional salt and black pepper to taste.

Bread the Seafood
Remove the shrimp and catfish from the marinade and allow excess buttermilk to drip off. Dredge each piece in the flour mixture until fully coated.
Frying

Heat the Oil
In a large pot or deep fryer, heat oil to 350°F (175°C).

Fry the Seafood
Carefully add the breaded shrimp and catfish to the hot oil in batches, frying for about 3-4 minutes or until golden brown. Remove with a slotted spoon and place on paper towels to drain excess oil.
Preparing the Fries

Fry the Potatoes
In a separate pot, heat oil to 350°F (175°C). Fry the potato fries in batches for about 5-7 minutes until golden and crispy. Remove and drain on paper towels. Season with salt to taste.
