Base (for Gelato - milk-egg custard)

    Warm milk and cream

    Pour 3 cups whole milk and 1 cup heavy cream into a medium saucepan. Add 3 tablespoons granulated sugar, 2 tablespoons invert sugar (or corn syrup/honey), and the split vanilla bean (seeds scraped in) or 1 teaspoon vanilla extract. Warm over medium heat, stirring occasionally, until the mixture is steaming and small bubbles form at the edge (about 170–175°F / 77–80°C). Do not boil.

    Whisk egg yolks

    While milk warms, place 4 large egg yolks in a bowl and whisk briskly until smooth and slightly pale.

    Temper eggs

    Slowly ladle about 1 cup of the hot milk mixture into the yolks while whisking constantly to temper. Pour the tempered yolks back into the saucepan with the remaining milk mixture, whisking to combine.

    Cook custard

    Return the saucepan to medium-low heat and cook, stirring constantly with a heatproof spatula or wooden spoon and scraping the bottom, until the custard thickens slightly and coats the back of the spoon (170–180°F / 77–82°C). Do not let it boil or curdle. This should take 5–8 minutes.

    Strain and chill

    Immediately remove from heat and strain the custard through a fine-mesh sieve into a clean bowl to remove any curdled bits and the vanilla pod. Stir in 1 teaspoon fine sea salt. Cool the custard to room temperature with the surface covered or pressed with plastic wrap to prevent a skin, then refrigerate until thoroughly chilled (at least 4 hours, preferably overnight).

Optional flavor additions (choose and follow steps appropriate to chosen flavor)

    Chocolate gelato

    If making chocolate gelato: Whisk 3 tablespoons dutch-process cocoa into ~1/2 cup of the warmed milk before tempering eggs so it dissolves, or melt 2 oz dark chocolate and whisk into the hot custard off heat until smooth. Then proceed to strain and chill as above.

    Fruit sorbetto / fruit-forward gelato

    For a fruit sorbetto (dairy-free) or a fruit-forward gelato: puree 1.5 cups ripe fruit in a blender until completely smooth. For sorbetto: combine the puree with 3 tablespoons superfine sugar and 1 tablespoon lemon juice; chill thoroughly, then churn (skip the custard base). For a fruit gelato: fold 1 cup of the chilled fruit puree into the chilled custard base, taste and adjust sugar/lemon, then proceed to churn.

    Pistachio gelato

    For pistachio: blitz 1/2 cup shelled roasted pistachios with 1 tablespoon neutral oil to make a smooth paste. Stir or whisk this paste into the warm custard before final cooling so the pistachio flavor infuses, then strain and chill as above.

Churning and finishing

    Prepare ice cream maker

    Ensure your ice cream maker’s bowl is frozen according to the manufacturer’s instructions (if required). For sorbetto, ensure the puree is well chilled. Start the machine.

    Churn

    Pour the chilled custard (or chilled fruit puree for sorbetto) into the ice cream maker and churn until it reaches a soft‑serve texture (about 20–30 minutes depending on machine). Gelato typically finishes slightly softer and denser than American ice cream.

    Finish and harden

    Transfer the churned gelato/sorbetto to a shallow, airtight container. Smooth the surface with a spatula, press a piece of parchment directly on the surface to minimize ice crystals, and close the lid. For scoopable gelato, freeze 2–4 hours to firm up slightly (gelato is best served a bit warmer than ice cream, around -10 to -12°C / 14–10°F).

    Serve

    Scoop with a slightly warmed scoop and serve with optional chopped nuts, chocolate shavings, or fresh fruit. Allow 3–5 minutes at room temperature if too hard, then scoop again.
