    Prepare dry ingredients

    In a large bowl whisk together the all-purpose flour, baking powder, baking soda, salt, light brown sugar, and ground cinnamon until evenly combined.

    Combine wet ingredients

    In a separate bowl mash the ripe bananas until mostly smooth with small chunks remaining. Add the eggs, buttermilk, vanilla extract, and melted butter and whisk until blended.

    Mix batter

    Pour the wet mixture into the dry ingredients and gently fold until just combined. Do not overmix — a few small lumps are fine. Let the batter rest 5 minutes to hydrate the flour and thicken slightly.

Whipped Brown Butter

    Brown the butter

    In a light-colored skillet or saucepan melt the unsalted butter over medium heat. Swirl frequently; the butter will foam, then clear, then begin to brown at the solids. Once fragrant and golden-brown (watch closely to avoid burning), remove from heat and transfer the butter immediately to a small bowl to stop cooking. Let cool to warm (not hot), about 5–8 minutes.

    Whip

    When the browned butter is warm but not hot, add the powdered sugar (if using) and a pinch of salt. Using a small hand mixer or whisk, beat the butter for 1–2 minutes until lightened in color and fluffy. Set aside at room temperature. The texture should be spreadable but still hold shape.

Cooking & Serving

    Preheat griddle

    Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or neutral oil. The surface is ready when a few drops of water dance and evaporate.

    Cook pancakes

    For each pancake, pour about 1/4 cup batter onto the hot griddle. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook until golden brown on the second side, another 1–2 minutes. Keep finished pancakes warm in a low oven (about 200°F / 95°C) while you cook remaining batter.

    Assemble

    Stack pancakes on plates. Spread a generous dollop of the whipped brown butter between layers or on top of the stack. Drizzle with pure maple syrup, add banana slices, sprinkle toasted shredded coconut and chopped macadamia nuts or walnuts if using.

    Serve immediately while warm. Provide extra whipped brown butter and maple syrup at the table for guests to add more if desired.
