    Chill glass and ingredients

    If possible, chill the wine glass (or large stemmed goblet) in the freezer for 5–10 minutes ahead of time. Ensure the Prosecco and soda water are well chilled.

    Fill glass with ice

    Fill a large wine glass about three-quarters full with fresh ice (approximately 1 cup). The ice keeps the drink cold and slows dilution.

    Measure and add Aperol

    Pour 3 tablespoons (about 1.5 fl oz) of Aperol over the ice. This is the bitter-sweet base of the spritz.

    Add Prosecco

    Slowly pour 3 fl oz of chilled Prosecco into the glass. Pour gently to preserve the bubbles and to create a layered effect.

    Top with soda water

    Add 1 fl oz of chilled soda water (club soda) on top. Stir very gently once with a bar spoon (one or two slow turns) to combine without flattening the Prosecco.

    Garnish and serve

    Garnish with an orange wheel on the rim or floated in the glass. Serve immediately while cold and effervescent.
