Preparation

1

Clean the Mussels

Rinse the mussels under cold running water to remove any sand and debris. Discard any mussels that are open and do not close when tapped.

2

Chop Shallots and Garlic

Finely chop the shallots and mince the garlic cloves.

3

Prepare Herbs

Roughly chop the fresh parsley and strip the leaves from the thyme stems.

Cooking

4

Sauté Aromatics

In a large pot, melt the butter over medium heat. Add the chopped shallots and minced garlic, and sauté until they are soft and translucent, about 3-4 minutes.

5

Add Wine and Spices

Pour in the dry white wine. Add the chopped parsley, thyme, black peppercorns, and bay leaf. Bring to a simmer and let it cook for 5 minutes.

6

Cook the Mussels

Add the cleaned mussels to the pot, cover with a lid, and cook for about 5-7 minutes until the mussels have opened. Discard any mussels that remain closed.

7

Season and Serve

Taste the broth and season with salt as needed. Serve the mussels hot in bowls, ladled with the broth and garnished with additional parsley if desired.
