Prepare bread

Spread softened butter evenly on the outside face of each bread slice. On the inside face of one slice, spread Dijon mustard and mayonnaise and distribute thinly sliced onion if using.

Assemble

Layer 3 slices of Swiss cheese on the mustard/mayo side of the bottom bread slice. Add corned or roast beef on top of the cheese if using, then add pickle slices. Top with remaining 3 slices of Swiss cheese (this helps create a melty interior) and place the second bread slice on top with the buttered side facing out.

Grill

Heat a skillet or griddle over medium-low to medium heat (about 300–325°F / 150–160°C equivalent). Place the assembled sandwich in the skillet. Cook 3–4 minutes per side, pressing gently with a spatula or a heavy pan to encourage even contact and melting. If the bread is browning before the cheese melts, lower heat and cover the skillet with a lid for 1–2 minutes to trap heat and melt the cheese through.

Finish and serve

When both sides are golden brown and the cheese is fully melted, transfer sandwich to a cutting board, let rest 1 minute, then cut in half diagonally. Serve immediately.
