Prepare bread and spread
Bring the bread slices to room temperature if chilled. Evenly spread mayonnaise on the inside of one slice and Dijon mustard on the inside of the other slice. This provides a moisture barrier and a little tang that complements the pepper jack.
Assemble cheese and jalapeños
Place 3 slices of pepper jack cheese on one slice of bread over the mayonnaise. Distribute the sliced pickled jalapeños evenly over the cheese so heat is balanced across the sandwich. If using optional add-ins, layer tomato or bacon on top of the cheese (tomato nearest the cheese to reduce sogginess).
Butter the exterior
Spread the unsalted butter in a thin, even layer on the outside face of both bread slices. Use softened butter for easier spreading.
Pan-grill the sandwich
Heat a nonstick or cast-iron skillet over medium-low to medium heat (about 325–350°F / 160–175°C if measured). Place the sandwich in the skillet, buttered side down. Cover the pan with a lid or a large metal bowl to trap heat and help the cheese melt. Cook 3–4 minutes until the bottom is golden brown and crisp.
Flip and finish
Carefully flip the sandwich using a spatula. Cook the second side 2–4 minutes with the lid on, pressing gently with the spatula, until the cheese is fully melted and the second side is golden and crisp. Reduce heat if exterior browns too quickly before cheese melts.
Rest and slice
Transfer the sandwich to a cutting board and let rest 1 minute (this helps the melted cheese settle). Slice diagonally or in half and serve immediately.
Optional Add-ins
If using bacon, cook to crisp in a skillet or oven, drain on paper towels, and add when assembling. For caramelized onions, cook thinly sliced onion in 1 tsp oil over low heat stirring occasionally for 20–25 minutes until deep golden and sweet; add to sandwich when assembling. If using tomato slices, pat dry to remove excess moisture and place between cheese and other fillings to minimize sogginess.
