Method

Prepare bacon & toast

Cook bacon

Preheat a skillet over medium heat. Add 6 slices of bacon in a single layer and cook 3–5 minutes per side until crisp but still slightly pliable. Transfer to a paper towel–lined plate to drain. Reserve a teaspoon of bacon fat in the pan for extra flavor (optional).

Toast buns

Split the sandwich rolls or brioche buns. Lightly butter the cut sides with 1 teaspoon butter each (or use reserved bacon fat). Place cut sides down in the skillet over medium heat and toast 1–2 minutes until golden. Remove and set aside.

Prepare spread & assemble base

Make mayo-mustard spread

In a small bowl, mix 3 tablespoons mayonnaise with 1 teaspoon Dijon mustard and 1 teaspoon hot sauce (optional). Stir until smooth and season with 1/8 tsp salt and a pinch of black pepper.

Slice avocado

Halve and pit the avocado, then scoop flesh and slice thinly (about 8–10 slices). Sprinkle the avocado lightly with 1/8 teaspoon salt and a grind of black pepper to season and prevent browning.

Assemble sandwich with 'The Works'

Layer sandwich

Spread about half of the mayo-mustard mixture on the bottom bun and the remaining half on the top bun. On the bottom bun, place 2 leaves of lettuce, then evenly arrange 4 ounces (half) of the sliced turkey breast. Top the turkey with 2 slices of Monterey Jack cheese, then place 3 slices of dill pickle chips in a row over the cheese.

Add bacon & avocado

Place 3 slices of cooked bacon over the pickles, then fan 4–5 avocado slices on top of the bacon. Add two tomato slices and 3 rings of red onion to provide brightness and crunch.

Finish & season

Sprinkle the tomato and avocado with the remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper (adjust to taste). Close the sandwich with the top bun. If desired, press briefly in the skillet (cheese side down) over very low heat for 30–45 seconds to gently melt the cheese and warm the sandwich—use a spatula to hold it closed.

Serving

Cut the sandwich in half on a diagonal and serve immediately. Offer extra pickles, hot sauce, or chips on the side.
