Baja Sauce (spicy crema)

Make Baja sauce

In a small bowl combine 1/4 cup mayonnaise, 1/4 cup sour cream, 1 tsp minced chipotle in adobo, 1 tbsp fresh lime juice, 1 tbsp finely chopped cilantro, 1/2 tsp minced garlic, 1/4 tsp smoked paprika and 1/4 tsp salt. Whisk until smooth and taste; adjust heat by adding more chipotle or thin with a teaspoon of water if too thick. Chill until assembly (at least 10 minutes).

Prepare produce and condiments

If using whole-berry cranberry sauce, stir gently to loosen. Thinly slice tomato and red onion. Drain sliced pickled jalapeños and pickles. Toss shredded lettuce with a pinch of salt and 1/4 tsp black pepper and set aside.

Warm cranberry sauce (optional)

For a slightly warmed cranberry layer, place 1/2 cup cranberry sauce in a small saucepan and warm over low heat for 2–3 minutes, stirring occasionally, then remove from heat. Keep warm while toasting the bread, or use at room temperature.

Sandwich Assembly & Finish

Prep bread

Slice the rolls in half horizontally. Spread 1 tablespoon of Baja sauce on the inside of each top and bottom half (reserve remaining sauce to serve).

Layer turkey and cheese

Lay half of the sliced turkey (about 4 oz) across each bottom roll. Top each turkey layer with 2 slices of pepper jack cheese, arranging to cover evenly.

Grill sandwich (melt cheese)

Heat a skillet or griddle over medium heat. Brush the outside cut faces of each roll with 1 tablespoon butter total (use about 1/2 tbs per cut face) or spread evenly. Place the assembled bottoms (with turkey and cheese) on the skillet, then top with the top halves. Cook 2–3 minutes per side, pressing gently with a spatula or a weight, until bread is golden brown and cheese is melted. Alternatively, finish under a broiler for 1–2 minutes until cheese melts.

Add cranberry and 'The Works'

Remove sandwiches from the skillet and open carefully. Spoon about 1/4 cup warmed or room-temperature cranberry sauce onto the melted cheese of each sandwich. Top cranberry sauce with a few slices of pickled jalapeño (about 1 tbsp), 2 pickle chips, a couple of tomato slices, a small handful (about 1/2 cup) of seasoned shredded lettuce, and a few thin rings of red onion. Close sandwiches.

Serve

Slice each sandwich in half if desired and serve immediately with remaining Baja sauce on the side for dipping. Estimated extra sauce yields about 2 tbsp.
