Prepare roll

Slice the sandwich roll horizontally, leaving a hinge if you prefer (or slice fully). If you like the bread warmed, toast it lightly under a broiler or in a skillet for 1–2 minutes until slightly crisp.

Assemble meats and cheese

Layer the meats on the bottom half of the roll in this order for balanced flavor and texture: ham, capicola, pepperoni, then salami. Fold or overlap the slices so they cover the length of the roll. Lay the provolone slices on top of the meats.

Vegetables & Pickles

Arrange the tomato slices on top of the cheese. Scatter the red onion rings evenly over the tomato. Add pickle slices down the center of the sandwich (if large, quarter them lengthwise). Place the sliced pepperoncini alongside or over the pickles for a tangy, mildly spicy note. Finish with torn lettuce leaves to add crunch and freshness.

Dressing & Seasoning

In a small bowl or measuring cup, whisk together the extra-virgin olive oil, red wine vinegar, and mustard (if using). Stir in the dried oregano, salt, and black pepper. Taste and adjust — the red wine vinegar should give a bright tang that balances the cured meats.

Drizzle about half of the dressing evenly over the vegetable layer and press the sandwich gently to compact layers. Reserve the remaining dressing to serve on the side or to add more to taste.

Close the sandwich, slice in half on a bias, and serve immediately. If preparing ahead, wrap tightly in parchment or plastic and refrigerate up to 6 hours; add lettuce and dressing just before serving for best texture.
