Make a flavored syrup

Combine the granulated sugar and 1 cup water in a small saucepan over medium heat. Stir until the sugar fully dissolves and the mixture comes to a gentle simmer, about 3–5 minutes. Do not boil vigorously; you want a clear syrup.

Remove the pan from heat. Stir in the 1/2 cup neutral-flavored liquid concentrate or flavored syrup until fully incorporated. If using fresh lemon juice, add 1 tablespoon now and stir. If you want a sharper soda tang, stir in 1/2 teaspoon citric acid until dissolved. Taste and adjust: add up to 2 tablespoons extra syrup or 1/2 teaspoon more citric acid if you prefer sweeter or more acidic.

Let the syrup cool to room temperature (about 20–30 minutes). For quickest cooling, transfer to a heatproof container and place in an ice bath while stirring occasionally. Once cool, strain if any particulate remains and chill in the refrigerator if not using immediately.

Measure and combine

Fill four serving glasses with about 1/2 cup ice each (total ~2 cups across all glasses). For each 1-cup serving (this recipe yields 4 fountain servings), pour 2 tablespoons (approx. 1 fl oz / 30 ml) of the prepared flavored syrup into each glass. If you prefer a stronger flavor, use up to 3 tablespoons per glass.

Slowly pour 1 cup (240 ml) cold carbonated water into each glass over the back of a spoon or down the side to preserve fizz and minimize foam. Stir gently once with a bar spoon or straw to combine syrup and carbonated water; avoid vigorous stirring to retain carbonation.

Taste each drink and adjust sweetness/acidity if needed: add up to 2 tablespoons additional flavored syrup per glass for sweetness or a small pinch of citric acid for brightness. If using bitters, add 1 dash per glass and stir gently.

Garnish and serve

Garnish each glass with a lemon slice, mint sprig, or maraschino cherry as desired. Serve immediately while cold and fizzy.

Optional Adjustments

If storing syrup: refrigerate the cooled syrup in a sealed container for up to 2 weeks. When using later, gently stir before measuring because some separation may occur.

For large-batch fountain service: scale the syrup proportionally (1 cup sugar + 1 cup water base to every 1/2 cup flavor concentrate) and dispense syrup at about a 1:12 to 1:8 ratio (syrup:carbonated water) depending on desired sweetness and flavor concentration. Maintain syrup chilled and lines clean to preserve flavor and carbonation.
