Heat milk and cream

Combine whole milk and heavy cream in a heavy-bottomed saucepan. Gently heat over medium-low, stirring occasionally, until the mixture reaches 86°F (30°C). Remove from heat briefly to prevent overshoot.

Add starter culture

Stir in the mesophilic starter culture or 1 tsp plain live-culture yogurt until well distributed. Cover the pot and let sit undisturbed at room temperature (around 70–75°F / 21–24°C) for 30–60 minutes to allow cultures to acidify the milk slightly.

Warm to coagulation temperature

After incubation, gently reheat the milk/cream mixture over low heat, stirring occasionally, until it reaches 86–90°F (30–32°C) if it cooled during incubation. Maintain gentle temperature for a few minutes.

Add diluted rennet

Dilute 1 tsp liquid rennet in 1 tablespoon cool, nonchlorinated water. Stir the diluted rennet into the milk/cream mixture with an up-and-down motion for about 20–30 seconds to ensure even distribution. Stop stirring and cover immediately.

Set the curd

Allow the mixture to sit undisturbed for 1–2 hours at room temperature until it sets and a clean break forms when you gently insert a knife or spoon (curd should be like soft custard).

Cut / ladle curd

Using a long knife or spatula, cut the curd into large 1-inch squares, or simply ladle the curd gently into a cheesecloth-lined sieve/colander set over a bowl. Do not stir vigorously; keep curd intact as much as possible.

Drain whey

Allow whey to drain at room temperature for 2–6 hours, depending on how thick you want the cheese. For traditional cream cheese texture, drain until the curd is spreadable but not runny. Optionally, gather cheesecloth and hang to drain for 2–4 hours for firmer texture.

Salt and blend

Transfer the drained curd to a mixing bowl. Add 1 teaspoon kosher salt. Beat with a hand mixer or whisk until smooth and creamy (about 2–4 minutes). Adjust salt to taste. If you prefer extra-smooth texture, process in a food processor for 30–60 seconds.

Chill and set

Pack the cream cheese into an airtight container, smoothing the surface. Refrigerate at least 4 hours (preferably overnight) to firm up and develop flavor. Store refrigerated for up to 10 days.

If using cheesecloth in a sieve, line the sieve with a double layer and fold over the edges to catch curd. For a very smooth commercial-style cream cheese, press the drained curd under light weight for 30–60 minutes before blending, then process in a food processor.

If rennet unavailable: you can omit rennet and make a quick cream cheese by heating 3 cups whole milk + 1 cup cream to 185°F (85°C), adding 2–3 tablespoons lemon juice or white vinegar to gently curdle, let sit 10 minutes, then drain as above. Yield and texture will differ from cultured cream cheese but still makes a spreadable cheese.
