Method
Prepare Ingredients
Cook bacon
Cook 3 strips of bacon to crispness in a skillet over medium heat (about 8–10 minutes), or bake on a sheet at 400°F/200°C for 15–18 minutes. Drain on paper towels and keep warm.
Slice tomato and season
Slice tomato into 3 even slices. Sprinkle tomato slices with about 1/8 tsp salt and a pinch (about 1/8 tsp) black pepper; set aside.
Prep lettuce and meats
Rinse and dry 2 leaves of romaine or leaf lettuce. If turkey and ham slices are large, fold or halve them so they fit cleanly on the bread.
Toast and assemble
Toast bread
Lightly butter one side of each of the 3 bread slices with the optional 1 tsp unsalted butter (buttered side will be outer face). Toast the bread in a skillet over medium heat (buttered side down) or in a toaster until golden and crisp, about 2–3 minutes per side if skillet, or 3–4 minutes in a toaster. You want slices warm and toasted but not burned.
Spread mayo
Evenly spread 1 tablespoon mayonnaise on one side of the bottom slice and 1 tablespoon mayonnaise on one side of the middle slice (these will be the interior spread surfaces).
First layer (turkey & cheese)
On the bottom toasted slice (mayo side up), arrange the 4 oz sliced turkey evenly, then place 1 slice of cheddar cheese on top of the turkey.
Second layer (ham & bacon & tomato)
Place the middle toasted slice (mayo side up) on top of the cheese. On that slice arrange the 2 oz sliced ham, the 3 cooked bacon strips, and the 3 seasoned tomato slices in a single even layer.
Top layer (lettuce & finish)
Place the 2 leaves of lettuce on top of the tomato. Top with the third toasted slice of bread, toasted side out. Press gently to compact the sandwich.
Secure and serve
Using two cocktail picks or sandwich picks, insert picks through the sandwich at two points to hold the three layers together. Using a sharp serrated knife, cut the sandwich diagonally into two triangles, cutting all three slices. Serve immediately while warm; provide extra mayo on the side if desired.
