Toast bread
Preheat a skillet or griddle over medium heat or set a toaster. If using a skillet, lightly butter one side of each slice of multi-grain bread (about 1/2 tsp butter per slice). Toast bread until golden and crisp, about 2–3 minutes per side in a skillet, or until your toaster reaches desired doneness. Transfer toasted slices to a plate, toasted side up.
Cook bacon
While bread toasts, cook the bacon. In a cold skillet lay the 4 bacon strips in a single layer, then turn heat to medium. Cook, flipping occasionally, until crisp and browned, about 8–12 minutes depending on thickness. Transfer bacon to a paper towel–lined plate to drain. If you prefer, bake bacon at 400°F (200°C) on a wire rack over a sheet pan for 12–18 minutes until crisp; drain on paper towels.
Prepare avocado
Halve and pit the avocado. Scoop out half the avocado (about 1/2 piece) into a small bowl and mash lightly with a fork until slightly chunky. Stir in the 1/2 tsp lemon juice, 1/4 tsp kosher salt, and 1/8 tsp freshly ground black pepper. Taste and adjust seasoning. If you prefer thin slices rather than mashed, slice the avocado and season slices lightly with salt and pepper.
Prepare tomato and lettuce
If not already sliced, slice a ripe tomato into 2 even slices about 1/4" thick. Rinse and pat dry 2 leaves of lettuce (butter or romaine). Trim any thick ribs if desired so the lettuce lays flat on the sandwich.
Assemble sandwich
Spread 1 tablespoon of mayonnaise evenly over the unbuttered side of one toasted bread slice. Spread the remaining 1 tablespoon of mayonnaise on the unbuttered side of the other slice (or on top of the avocado if you used mashed avocado and prefer less mayo on bread). On one mayo-coated slice, evenly spread the mashed or sliced avocado. Layer the two tomato slices over the avocado, then place the 4 cooked bacon strips in an even layer on top of the tomato. Add the 2 lettuce leaves on top of the bacon. Close the sandwich with the second toasted bread slice, mayo-side down.
Finish and serve
Press the sandwich gently to compact. If desired, cut the sandwich diagonally into two halves using a sharp knife and secure with toothpicks. Serve immediately while bacon is warm and bread is crisp. Note: this sandwich does not come in a half-portion.
