Prepare Spread & Avocado
Make the cream cheese spread
In a small bowl, combine the softened cream cheese, mayonnaise, Dijon mustard, lemon juice, garlic powder, half the salt (0.25 tsp) and half the pepper (0.125 tsp). Stir until smooth and spreadable. If the cream cheese is very stiff, microwave in 5–10 second bursts until pliable.
Assemble Sandwich
Toast the bread slices if desired: lightly toast 2 slices until golden (about 1–2 minutes) to add structure and prevent sogginess.
Spread about half of the cream cheese mixture evenly on one slice of bread. On the other slice spread the mashed avocado (all or about 2 tablespoons if you reserved extra).
Layer the sliced roasted turkey evenly over the cream cheese–topped slice, arranging so the meat covers the bread (about 8 oz).
Place the sliced cheddar cheese on top of the turkey. If you prefer warm melted cheese, place the open sandwich under a broiler for 30–60 seconds until the cheese just begins to melt (watch carefully).
Add tomato slices, red onion rings, dill pickle slices, and lettuce on top of the cheese in that order to distribute moisture and flavor. Scatter red pepper flakes over the tomato for a subtle heat and sprinkle remaining salt and pepper if desired.
If using optional bacon or pepperoncini, add them now. Close the sandwich with the avocado-spread slice of bread.
Press gently, cut the sandwich in half on the diagonal or down the middle, and serve immediately. If making ahead, wrap tightly in plastic wrap and refrigerate for up to 6 hours; add tomato and lettuce just before serving to avoid sogginess.
