Brew tea

Place 4 black tea bags in a heatproof pitcher. Pour 4 cups of boiling water over the tea bags and let steep for 5 minutes for a medium strength (steep 7 minutes for stronger).

Sweeten and cool

Remove the tea bags, gently pressing them against the side of the pitcher to extract flavor. While the tea is still hot, stir in 1 tablespoon granulated sugar (or 2 tablespoons simple syrup) until fully dissolved.

Add lemon and mint

Stir in 1 cup fresh lemon juice and add 10 fresh mint leaves (lightly bruised by a clap between palms to release aroma). Let the mixture cool at room temperature for 10–15 minutes so flavors marry.

Assemble and chill

Fill serving glasses or the pitcher with 2 cups ice cubes. Pour the cooled tea over the ice and top with 2 cups cold water to dilute to desired strength. Taste and adjust sweetness if needed. Garnish with lemon slices and an extra mint sprig.

Serve immediately over ice for a refreshing beverage. Keeps chilled in the refrigerator for up to 24 hours; stir before pouring.

Prepare potatoes

Preheat oven to 425°F (220°C). Using a mandoline or sharp knife, slice 2 russet potatoes very thinly (about 1.5–2 mm). Rinse the slices in cold water to remove surface starch until water runs clear.

Dry slices

Lay the potato slices on a clean kitchen towel or paper towels and pat very dry on both sides. Removing surface moisture helps them crisp in the oven.

Season

Place dried potato slices in a large bowl. Drizzle with 1 tablespoon olive oil and toss to coat evenly. Sprinkle 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon smoked paprika, and 1/4 teaspoon garlic powder; toss to distribute. If using, add 2 tablespoons grated Parmesan and toss again.

Arrange and bake

Arrange slices in a single layer on a parchment-lined baking sheet, ensuring they don't overlap. Bake at 425°F (220°C) for 12–18 minutes, flipping once halfway, until edges are golden brown and crisp. Watch closely toward the end to prevent burning.

Cool and crisp

Remove chips from oven and transfer to a wire rack to cool — they will crisp further as they sit. Taste and adjust seasoning with a pinch more salt if desired.
