Method
Prep Cucumbers
Wash the cucumber. If using a large English cucumber with thick skin, peel one strip out of every 2–3 strips for texture (optional). Cut the cucumber lengthwise and scoop out seeds if they are watery and large; for Persian cucumbers skip scooping. Slice the cucumber into 1/8–1/4-inch half-moons or small dice, depending on your texture preference.
Place the sliced cucumber in a colander set over a bowl. Sprinkle with 1/2 teaspoon kosher salt and toss lightly. Let drain and sweat for 10–15 minutes to remove excess water, then press gently with a clean kitchen towel or paper towel to pat dry. This keeps the yogurt from becoming watery.
Make Yogurt Dressing
In a medium mixing bowl, add the Greek yogurt. Whisk in the olive oil and lemon juice until smooth and slightly glossy.
Stir in the minced garlic, dried mint, ground cumin (if using), remaining 1/2 teaspoon salt, and black pepper. Taste and adjust seasoning—add up to another 1/4–1/2 teaspoon salt or more lemon juice if you prefer a brighter flavor.
If you prefer a thinner consistency (for drizzling), whisk in 1–2 tablespoons cold water or milk until you reach the desired texture.
Assemble Salad
Stir in the chopped fresh dill, if using, reserving a pinch for garnish.
Transfer the salad to a serving bowl. Drizzle a scant 1/2 teaspoon extra-virgin olive oil over the top and dust with smoked paprika or Aleppo pepper. Finish with the reserved dill or a small pinch of dried mint for aroma.
Chill & Serve
Serve chilled as a side dish, meze, or sauce alongside grilled meats, flatbreads, or rice. Keeps well in an airtight container in the refrigerator for up to 2 days; stir before serving and drain any excess liquid if needed.
